A polemic in response to D. Bagchi et al. (ibid. 2002, 180, 5-22). The authors raised several questions relating to the cytotoxicity and oxidative mechanisms of different forms of chromium, particularly those focused on the safety and toxicity of chromium picolinate. However, in their review, the authors did not include most of the numerous published data supporting the safety and efficacy of chromium picolinate. The concern regarding the potential carcinogenicity of chromium picolinate is primarily based on pos. findings in selected in vitro mutagenicity assays, which are entirely different and inconsistent with existing studies that have evaluated the in vitro mutagenicity of other trivalent chromium compounds

Contrary to previous documentation, it has been shown that nisin solution is not stable to autoclaving at pH 2. It is most stable at pH 3 (<5% activity loss at 115°C 20 min^-1), while all values below and above this show a marked decrease in activity, especially those furthest removed from pH 3.
